Before switching from ovo-lacto veg-ism to almost total vegan, I found that a good egg & cheese biscuit in the morning kept me full for most of the day. Now that I'm going vegan, this is no longer an option (and I find egg beaters to be EXTREMELY GROSS), I can't seem to find a breakfast option that doesn't have me craving everything & stuffing my face before noon. Does anyone have any breakfast menu ideas (besides oatmeal- no working) that are vegan-friendly, low-budget, & low-effort, that will keep me full and satisfied? |

I believe there are two kinds of people: those who need a hearty breakfast and those who don't. The ones who don't seem like aliens from outer space but power to them. For the rest of us human beings, veganizing our favorite hearty breakfasts is absolutely key.
It sounds like you crave the classic combo of fat, salt, and carbs in the morning. You and me both, sister! There are plenty of vegan versions of those that don't take forever to make. I suggest you get really familiar with scrambling tofu. It may just become your best friend. It takes all of ten minutes and is super easy, especially if you use a mix like the Tofu scrambler seasoning mix from Fantastic Foods, which can be found at most health food stores and well-stocked groceries. If not, you can always order it at a place like veganessentials.com. Toss your scramble onto a tortilla, sprinkle some Daiya cheese shreds if you've got 'em, and go. Or, if you're up for making your own seasoning, tofu scramble is incredible versatile. Feeling French? Mix in some cherry tomatoes and herbs du Provence. Feeling Mexican? Add cilantro, salsa, and avocado to your wrap. Take just 5 minutes and peruse the Vegan Tofu Scramble and "Egg"-Type recipes on Vegweb for ideas and inspiration. Missing bacon? Add some smoky tempeh strips to your breakfast repertoire.
If you're brave enough, have lunch for breakfast. Have a veggie burger or a burrito. I do sometimes. Sometimes I even have a...hummus wrap for breakfast (gasp!) You're on the vegan path, so you already have a healthy disrespect for authority. Screw the rules! Screw the establishment! Break free and be the rebel you were born to be!
Last thought: don't give up on oatmeal just yet until you've tried steel cut oats. Oat flakes and especially instant oatmeal are filling for about 35 minutes. Steel cut oats, however, can fill you up for hours. Toss some berries in. Add a dollop of peanut butter for added savoriness, and you're golden. Scouts honor. Or rather, rebel scout's honor...if that's not an oxymoron.
