I had SUCH a lovely holiday, those CO2 emissions be damned! (When will they invent wind-powered aeroplanes?)
How exciting that you'll be going to Nicaragua for that long. Will you be working? Volunteering? Vacationing? In any case, it sounds like you're rightfully assuming that most of the people there will have no frame of reference for veganish living and that it's best to be prepared. I'd recommend stocking up on Vega brand supplement powders and energy bars. In terms of drink powders, you can either go the meal replacement route with the Whole Food Health Optimizer or you can go with the Whole Food Smoothie Infusion, which is perfect for blending with fruit, ice, water or juice. It contains a blend of greens including spirulina, organic wheat grass, organic alfalfa grass, organic barley grass, organic spinach, organic sprouted broccoli, organic kale, organic kelp, and organic dulse. The website even lists some recipes for smoothies. The tropical smoothie sounds like it would be perfect for what's available in Nicaragua. But if you're not sure you'll even have access to a blender or fruit, consider going with the Shake & Go Smoothies--just add water and boom!--two servings of veggies.
I brought some Vega Whole Food Energy Bars and Vibrancy Bars (also contains the organic green food blend) with me on vacation, and they were tastier than I'd expected. Sometimes you really want something filling, and a drink doesn't cut it.

Besides the Vega powders that I add to smoothies and such, I'm currently taking VegLife Vegan One Multiple, Deva Vegan Omega-3 DHA, and Dr. Fuhrman's Osteo Sun for calcium, magnesium and vitamin D. I've also taken VeganLife's Cal/Mag and Dr. Fuhrman's Gentle Care Multivitamin. I highly recommend reading registered dietitian Jack Norris' page on Bones, Vitamin D, and Calcium. A bone health supplement is, I think, a very good idea for vegans and non-vegans alike.
Whole Foods carries VegLife brand and Vega products. Maybe swing by and see what you can find? Do try smaller packets of several flavors of Vega products before you go to see what you like and what you want to spend money on (they ain't cheap.) Some people love the taste of some and hate the taste of others. I can't stand the Whole Food Health Optimizer by itself, but I have other friends who can, so sample a lot and mix with various juices, fruits, etc.
