I run into people all the time who say they could neeeever go vegan because they caaaan’t live without cheeeeese. I was one of those people…until I read about veal calves being byproducts of the dairy industry. Then I went vegan and lost 15 POUNDS OF CHEESE!
The good news is that you can still enjoy the creaminess of cheese without eating a piece of cow’s curdled and cured breast milk. There is finally a fantastic vegan cheese called Daiya that closely resembles the taste and texture of dairy cheese without clogging your arteries. Store-bought vegan cheeses are, um, an acquired taste. The one that I think comes closest to the taste of dairy cheese is Tofutti’s brand of American slices. Feel free to try different brands and flavors of store-bought vegan cheese.
In the meantime, I’d strongly suggest trying your hand at creating your own cheezy sauce using nutritional yeast, which is full of B vitamins. You can put it on sandwiches, veggies, or even a tofu scramble. Sooo…
